Mint Cream Filling


2 tbsp softened unsalted butter
1-1/2 cups powdered sugar
4 tablespoons light cream
¼ tsp mint extract
Green food coloring

In a small bowl, cream the butter, powdered sugar and cream until smooth.  Stir in the mint extract and food coloring to desired mint color.  Put in the refrigerator to chill and thicken for roughly 20 minutes.  Scoop into a pastry bag with desired tip.  Fill each well with filling.
