Superfood Pancakes


1-1/2 cups organic flour
¼ cup CocoaX cocoa and espresso blend
½ cup organic sugar
1 tsp vanilla extract
2 tsp baking powder
¼ tsp salt
½ tsp baking soda
2 eggs
1-1/2 cups buttermilk
½ cup unsalted butter, melted

Garnish with fresh fruit and powdered sugar

In a large bowl combine the flour, baking powder, baking soda, CocoaX and sugar, then set aside.  In another large bowl whisk together the melted butter, buttermilk, eggs and vanilla.  Slowly add the dry ingredients into the wet ingredients and mix well, but do not over mix.  Let sit 5 minutes while you heat a nonstick skillet to medium heat.  Pour a ladleful of batter into pan and turn when bubbly and edges look done.  Serve with fresh fruit and sprinkle with powdered sugar.  (I used strawberries and they were delicious).
